Maybe I'm just a bit confused or something, but is there an option to change the resolution size of the screen caps? All I can seem to get is 640x480s

Ah darn... so there's no option in having them in higher res unless I change it myself in paint or something...

Higher res may not naturally exist.  The Wii outputs normally at 480p/480i (which would be 640x480 in a 4:3 aspect ratio.)  So the 640x480 is in effect it's native output resolution and is not able to be increased without interpolation or other similar methods.

the native resolution is mostly even much different.. if you tick the enable resizing checkbox then it'll resize to 4:3 or 16:9 - however, if you want to post-process your pictures then you should disable that option!

Also if you're using 480i/576i: check if EFB works - on some games it works and it usually has higher quality than XFB (though it is missing some data on several games). If you're in 480p mode there's hardly a visible difference between XFB and EFB and XFB should work in 90% of the cases!

Right, the Wii outputs at 640x480, its highest 4:3 resolution. It's quite unfortunate that the Wii doesn't support high definition output. If it did then we could have a lot more fun with screen captures.
